Job Summary
The Prep Cook is responsible for the preparation of portions, ingredients and recipe components as well as specific production and line preparations. Prepare, portion, stock and monitor items for the salad bar station, and self-serve coolers. Wash and clean tableware, pots, pans and cooking equipment. Keep the galley, dining room and equipment clean and organized.
Prepare all food items for the execution of the Lead Cook including all hot, cold and baked products. Understand and comply with standard portion sizes, cooking methods, quality standards and galley practices. Prepare equipment and obtain supplies as needed. Maintain cleanliness and sanitation of the galley and dining room including all floors, walls, equipment, workstations, dining and self-serve areas. Open or close galley as schedule dictates. Perform additional responsibilities as requested by the Lead Cook, Sr. Lead Cook or Facility Manager at any time.
Essential Duties and Responsibilities:
Complete assigned prep work to stock and set up stations as necessary
Prepare a variety of foods with different methods of preparation
Use approved recipes and production standards to ensure proper quality, serving temperatures and standard portion control
Carry pans, kettles and trays of food to and from workstations, stove and refrigerator in accordance with established safety standards
Store foods in designated areas following standard wrapping, dating and food safety and rotation procedures
Clean, sanitize and maintain all assigned work areas, equipment and utensils to ensure sanitation standards are met
Maintain good working relationships with coworkers, customers and managers
Perform job safely while maintaining a clean, safe work environment
Perform other duties as assigned
Additional Requirements:
Must be able to work in fast paced work environment. This position will spend 100% of the time standing. Requires bending, kneeling and reaching. Ability to lift and transport up to 50 pounds. Environmental exposures to cold, heat, and water.

Education: High School education or GED
Certification Requirements: ServSafe Safe Food Handler or equivalent
Experience: Minimum 2 years prep cook or other retail/commercial cooking experience
